Wine Maker’s Notes:
The grapes were picked early in the morning at a sugar level of 22.4°B and a temperature of 22°C. They were left to cool overnight, de-stemmed and crushed the next morning and then cold macerated for 48hours. The must was punched down four or five times a day to extract the maximum colour from the skins, whereafter 100 litres of free-run juice was racked off to make this wine. After the juice was allowed to settle and clarify for a further 48 hours, unaged spirit was added to fortify the wine and to prevent any fermentation from taking place.
The wine was left to mature for twelve weeks in a small stainless-steel tank before being bottled.
Tasting Notes:
A deliciously sweet and voluptuous red dessert wine with notes of ripe plums and blackberries. Pair with sweet meat dishes, desserts and chocolate, on ice or with soda as a refreshing cocktail. Best served chilled.
