Winemaker’s Notes:
The grapes were picked early in the morning at 22.7°B and stored overnight in a cold room at 4°C. They were de-stemmed and crushed the next morning and left on the skins for three hours before being given a light pressing. The juice was then racked to a stainless -teel tank to settle for three days before being racked off the lees into a stainless-steel fermentation tank and innoculated with La Forte X16 yeast. It was then controlled cool fermented for three weeks with oak chips, suspended in a muslin net, to add to the complexity of the wine. As the fermentation was coming to an end, malalactic conversion was initiated.
Tasting Notes:
An aromatic wine with distinct notes of pear and pineapple. Medium bodied, lightly wooded, crisp wine with a buttery mouth feel.
A wine for everyday enjoyment and to pair with salads, fish and white meat dishes. Serve will chilled.
