Winemaker’s Notes:
The grapes were harvested in the early morning, at 20.6°B and refridgerated overnight at 4°C before de-stemming and crushing the next day. After three hours of skin contact, the grapes were pressed and racked over to a stainless-steel tank to settle for twenty four hours. The must was then inoculated with Anchor VIN 13 yeast, and cold fermented for twenty three days. It was then racked off its lees and settled in a stainless-steel tank for two months before being filtered and bottled.
Tasting Notes:
A light bodied, crisp, tart flavoured wine from older Colombar vines found in the alluvial plains of Calitzdorp. Tropical fruits on the nose with tart, green apples, sweet melon, guavas, white peaches, and almonds on the palate. Colombard is very food friendly and pairs well with fish and chips, roast chicken, pork chops and cheeses.
