Winemaker’s Notes:
The late ripening grapes were picked in the early moning at 19°B. The were left overnight in a cold-room, then de-stemmed and crushed the following day and left for three hours with skin contact before being crushed and racked over into a stainless-steel tank to settle for three days. The must was then inoculated withNT 16 yeast. It was cold fermented in stainless-steel tanks for two weeks after which it was racked off its lees and allowed to settle in stainless steel tanks for two months before bottling.
Tasting Notes:
Palomino, also known in South Africa as” Fransdruif “or” White French”, actually originated in Andalusia in Spain. Normally used for making “sherry” style fortified wine, these 60-year-old vines, produce low yields with concentrated flavours, expressing a nose of white peach blossom, citrus flowers and lychee, peach, nectarine, and orange on the palate, with a buttery aftertaste. This unusual 100 % Palomino varietal, dry white is a small batch, handcrafted wine.
